In Modena, Giovanni Leonardi is as famous as Enzo Ferrari and Luciano Pavarotti. Embracing exacting traditional methods passed down through four generations of the family, all of the farm’s vinegars are crafted exclusively from Lambrusco and Trebbiano grapes, ripened slowly under the Italian sun before being hand picked and matured in wooden barrels to ensure the most intense flavour and richest hues. Each barrel is subject to age-old tests before bottling – the Leonardis taste test using china spoons that won’t compromise the vinegar’s flavour and continue to check colour and consistency by candlelight, just as their ancestors once did.
