Krumiri are a type of Italian biscuit from Casale Monferrato invented, almost by accident, in 1878 by the pastry chef Domenico Rossi. These biscuits were an immediate success and imitated by many pastry chefs; which is why Domenico soon sought out to protect his creation. In 1890 he received an official document by the mayor of Casale Monferrato that sanctioned the invention of this biscuit to him. Since then the recipe has remained a secret, though there are several different versions using different types of flour. This is Nativa Food's take on these crispy delights, using 100% gluten-free teff, rice and potato flour.
