A traditional Cantabrian recipe made with Don Bocarte's sublime anchovies. The anchovies are fried in extra virgin olive oil, flour, garlic, onion, and paprika. To consume, heat in a saucepan for 2 minutes or in a microwave for 30 seconds.

Don Bocarte's anchovies only come from the Bay of Biscay, known as the best place in the world for anchovies thanks to the special algal blooms that the fish feed on. The young sardines are harvested each year between April and June, when the fat content and flavour are at their best, and then salt cured for no less than 8 months. Later they are hand washed and packed in extra-virgin olive oil; a process that makes for an anchovy guaranteed to melt-in-your-mouth.
