The lomo by Simon Martin is prepared with the same care as his Iberian hams, in the tradition of Iberian pork-based charcuterie. Lomos are the equivalent of the loin, and just as high quality as the iberico hams themselves. Stuffed by hand with the famous Pimentón DO de la Vera (Cáceres), they are then marinated with salt, garlic and oregano and refined for several months. A true deluxe tapas and new way to enjoy the delicatessen of Iberian pork.

These pure-breed Iberian pigs roam freely among oak groves (dehesas), where they feed on nothing but acorns during the fall and winter. The exercise and diet have a significant impact on the flavour of the meat.
