The Sant’Elena estate has a surface of approximately 40 hectares in a single plot. The vines are gently maintained under the Guyot method, which results in an average density between 5000-6000 plants per hectare. Experienced workers vigilantly trim the vineyards by hand, and the estate employs the green harvesting techniques to increase the concentration of grapes, creating a richer and longer-lived product. The harvest is exclusively made by hand every August and September, only using grapes from the estate.
