  • Truffle Mac and Cheese with Broccoli

I’m still enjoying the current cooler weather here in Hong Kong – and all the great comfort food that comes with it! When you’re feeling that call for comfort food, there’s no better dish to whip up than a creamy, cheesy and indulgent bowl of mac and cheese made even better with Sirana Gligora’s truffle cheese. Although this dish does take some preparation, I assure you that the result is definitely worth it!

I decided to add some broccoli and breadcrumbs for extra texture, but you could also swap in other more sinful toppings like bacon bits if you prefer. If you need an extra punch of truffle, stir in a small amount of truffle pasteor even top your mac and cheese with some shaved fresh trufflefor good measure.


Serves 3-4

200g m
macaroni pasta
1 cup
Sirana Gligora truffle cheese, shaved
1 head broccoli, blanched
and chopped
600ml milk
100ml whipping cream
20g flour
40g unsalted butter
5 tbsp bread crumbs
Salt and pepper to taste


  1. In salted boiling water, cook pasta according to its package instructions until it is al dente (cook for 1-2 minutes under the recommended time if you prefer a firmer texture). Drain and put aside.
  2. Blanch the broccoli in boiling water for 1 minute. Drain and put aside.
  3. Make the roux by melting half the butter in a pan and mixing in the flour; cook for 1-2 minutes until it is fully mixed together. Fold in the milk and cream, and whisk the mixture until it thickens and is smooth.
  4. Add the truffle cheese, and salt and pepper to taste. Add the cooked broccoli and pasta and mix well, then set aside in a casserole dish.
  5. Melt the rest of the butter in a pan and mix in the breadcrumbs. Stir and cook until the breadcrumbs absorb the butter and turn golden brown.
  6. Bake the macaroni in the oven for 15-20 minutes at 180C, or until it starts to brown. Sprinkle breadcrumbs on top and serve!
