  • Mini Toasts with Smoked Salmon and Caviar

There’s nothing more sophisticated than smoked salmon and caviar when you’re throwing a dinner party at home, and these mini toast canapés – made with ADAMAS’ delectable caviar – are a classic for a reason. Make a lasting impression on your dinner guests by throwing together these creamy, addictive and delicious hors d’oeuvres in well under an hour… playing host has never been easier!

Whilst slicing up small baguettes for these canapés is an easy enough job, an even quicker shortcut is to buy crispy mini toasts from a supermarket or bakery near you; I also recommend choosing a less-smoked salmon to avoid making this dish too salty. These canapés take very little skill to put together, so they’re great for getting the kids involved in a fun family cooking day too!

Makes 20 pieces

Ingredients

10g ADAMAS Caviar Black
20 mini toasts (or 1 small baguette, sliced thinly and toasted)
250g smoked salmon
100g crème fraîche
25g lemon oil (or mix 10g of olive oil with 15g of lemon juice)
15g capers, drained
A handful of dill stalks
Black pepper to taste

 

Method

  1. Cut 20 strips of smoked salmon into slices around 3-5cm wide.
  2. Use a blender to combine the remaining smoked salmon with the crème fraîche, capers, lemon oil, black pepper and dill (setting aside some dill for garnish). Blend until the mixture has a creamy and smooth consistency.
  3. Leave the mixture in the fridge for 15 minutes to an hour, until it has solidified into a thicker mousse-like texture.
  4. Using two small teaspoons, shape and place the mousse on the mini toasts, then wrap the salmon strips around the mousse.
  5. Top each toast with a small spoonful of caviar and a sprig of dill as garnish. Serve with champagne and enjoy!
