  • Marinated Chicken Brochette With Apricots and Espelette Vinegar

If you are looking for unique combinations of flavours for your chicken, this is an amazing recipe. So easy, so special and so delicious with our artisan vinegar from Popol!

Ingredients

4 chicken breasts 12 apricots
2 tbsp liquid honey
6 tbsp extra virgin olive oil Popol
6 tbsp Vinegar with Espelette Pepper
1 tsp Madagascar pepper 
1 pinch of salt
1 bunch of  fresh onions
2 sprigs of fresh thyme


Method

  1. Preheat your oven at 210°C / or your barbecue grill.
  2. Cut the chicken breasts into small cubes. Open the apricots in half and pit them. Place these ingredients in a hollow dish.
  3. In a bowl, combine the honey, olive oil, Espelette vinegar, pepper and a large pinch of salt. Pour this over your chicken and apricots and mix. Cover and refrigerate for 1 hour.
  4. Meanwhile, peel the onions, cut them into four, leaving a centimetre of green stem.
  5. Skew your pieces of chicken, apricots and onions. If you are using wooden skewers make sure to soak them in water beforehand, to prevent them from burning and sticking to food.
  6. Place the skewers in a baking dish and cook in the oven (or on the grill) for 20 minutes, brushing them regularly with the marinade.
  7. Serve the skewers decorated with fresh branches of thyme.
