Classic Panna Cotta - Profood Limited

A classic panna cotta is actually one of the easiest desserts to make in any home kitchen, requiring just half an hour of preparation time. But while this dessert is almost fool-proof to make, its simplicity means that you should always try to use the very best ingredients available – like Profood’s Pompona Vanilla Pod – to make the difference between a good panna cotta and a great one. 

Panna Cotta ingredients

Milk reaching 80°C

Pouring Panna Cotta into ramekin

Serves 4

1 cup / 250ml milk
1 cup / 250ml whipping cream
3 sheets / approximately 12g gelatine
1 Vanilla Pod - Pompona
2 tablespoons sugar
Optional garnishes, such as honey and mint, fresh fruit, or raspberry coulis, as they do in France. Alternatively, make like the Italians and serve with a splash of Grappa! 


  1. Bloom the gelatine sheets by soaking them in a bowl of water for 20 minutes, until soft.
  2. Add both milk and cream to a saucepan, bringing it to a slow simmer on the stove.
  3. Meanwhile, split your vanilla pod lengthways and scrape all the seeds into the saucepan before adding in the entire pod. Stir well to mix all the ingredients together.
  4. When your milk and cream mixture reaches 80°C (measure with a cooking thermometer for accuracy), turn off the heat – never let this boil. Stir in the sugar until completely dissolved, then remove the vanilla pod and discard.
  5. Squeeze the water out of the softened sheets of gelatine then add to the pan, gently stirring until completely dissolved.
  6. Divide the mixture in four ramekins and cool before placing in the refrigerator for a minimum of three hours until completely set.
  7. Serve with your choice of garnish and enjoy!
