  • Baked Carrots With Organic Parmigiano Reggiano

A delicate and light appetiser with beautiful flavour combinations - the sweetness of the carrots, the juiciness of the tomatoes, and the texture and  saltiness of the parmesan cheese by Montanari & Gruzza.

Serves 4

Ingredients:
600g of carrots
250g of tomato puree
100g of organic parmesan cheese
2 tbsp of virgin olive oil
fresh basil

 

Method
  1. Preheat oven to 180°C.
  2. Peel the carrots and cut into 1/2-inch thick rounds.
  3. Steam carrots for 5 minutes.
  4. For tomato sauce: heat up olive oil in a large skillet, reduce to medium heat and  add tomato puree with fresh basil. Cook 10 to 15 minutes over medium heat, stirring occasionally.
  5. With a dish spoon place tomato sauce in 4 single portion baking dishes one spoon at a time, then top it with a layer of the steamed carrots followed by layer of grated parmesan cheese.
  6. Repeat the layering 2 more times.
  7. Bake for 20 minutes or until golden in colour and cooked through. Enjoy!
