Unless you're not a fish lover at all, in my experience nobody can resist an authentic anchovy from the Cantabrian sea! Forget the uber salty supermarket kind. These small shiny silver fish have a rich meat and a delicate taste. They are also packed with omega-3 fatty acids for a healthy heart, magnesium for strong bones, and iron for overall well being and energy. Best of all, they are very low in mercury, making them safe to eat even during pregnancy. From Santoña (Cantabria), Don Bocarte produces anchovies only from the Bay of Biscay (aka the Cantabrian Sea), known as the number one place in the world for anchovies, thanks to special algal "blooms" that the fish feed on. Filleted, salt-cured and placed in extra-virgin olive oil by hand, they are a true local tradition of Northern Spain.
